Panagal Kandu is a type of jaggery made from the sap of the palmyra tree (Borassus flabellifer), which is native to tropical regions of Asia. The sap is collected from the flower buds of the tree and then boiled to form a thick, sticky syrup, which solidifies as it cools. The result is a dense, brown block of jaggery that has a deep, caramel-like flavor.
